Here’s a truly tasty meatloaf that’s really easy to put together and sure to become a family favorite.
Shredded sweet potatoes help keep it moist and tender, plus add a boost of vitamins and minerals. Barbecue sauce, both in the loaf and spread on top, adds a slightly sweet, slightly spicy flavor that brings it all together.

2 Cups shredded orange- or yellow/white-fleshed sweetpotatoes, or a combination |
1 Cup diced onion |
3 large eggs, lightly beaten |
1 Tablespoon yellow mustard |
1 1/2 Teaspoon salt |
1 Teaspoon pepper |
1/2 Cup barbecue sauce, divided, plus more for serving |
2 Pounds ground beef, pork, or turkey, or a combination |
1 1/2 Cups breadcrumbs |
Preheat the oven to 375°F.
In a large bowl, combine the sweet potatoes, onion, eggs, mustard, salt, pepper, and 1/4 cup of the barbecue sauce. Gently stir in the ground meat. Sprinkle in the breadcrumbs and mix until just combined.
Gently pack the mixture into a 9-by-5-by-3-inch loaf pan. Place the pan on a rimmed baking sheet and bake for 1 hour.
Brush the top of the meatloaf with the remaining 1/4 cup of barbecue sauce and continue baking until an internal thermometer inserted into the center reads 165°F, about 10 minutes. Set aside to rest for 10 minutes.
Slice and serve with additional barbecue sauce alongside.
