



Only mildly-spicy, these muffins have great texture, flavor, and nutrition thanks to mashed sweet potatoes in the batter. Enjoy them for breakfast, brunch, lunch, or dinner—they go great with ham and eggs, green salads, soups, stews, and chili.
Makes 20 muffins
| 2 orange-fleshed sweet potatoes (about 1 1/2 pounds total) |
| 2 Cups yellow cornmeal |
| 1 Cup all-purpose flour |
| 1 Tablespoon baking powder |
| 1 1/2 Teaspoons salt |
| 1/2 Teaspoon baking soda |
| 1/2 Teaspoon ground chipotle chili peppers |
| 8 Ounces cream cheese, softene |
| 4 large eggs |
| 1/2 Cup melted unsalted butter or cooking oil |
| 1/2 Cup plain yogurt |
| 1/3 Cup honey or agave nectar |
| 2 jalapenos thinly sliced, divided |
